Pickled Onion & Feta Salad

Lettuce of your choice Vegan feta Diced walnuts Pickled Onions 1 sliced red onion 1/2 c apple cider vinegar 1/4 c white wine vinegar 1/2 c water 2 Tbsp honey 1 Tbsp salt Put all ingredients in a saucepan. Heat until honey and salt are dissolved. Take off heat and let cool 5 minutes. Put onions into a mason jar and pour liquid over onions. Seal and let marinate for at least an hour, overnight is best.   Dijon Dressing 1 avocado 2 Tbsp Dijon mustard 2 Tbsp Tahini 1/4 c Olive Oil Salt Pepper Half a shallot Optional: Vinegar leftover from onions to thin and add flavor Put all ingredients (except shallot) in mini food processor or blender. Mix until well combined, add vinegar mix and/or water to get desired consistency and flavor, stir in shallots.
