No-Bake Cookies

 Traditional no-bake, just with a vegan twist. Yields approximately 24 cookies

  • 1/2 c vegan butter
  • 1 3/4 c organic sugar
  • 1/2 c unsweetened almond (or alternative) milk
  • 1/4 c cacao powder
  • 3 cup quick oats
  • 3/4 c peanut butter (creamy or chunky)
  • 1 Tbsp vanilla extract
  • 1/4 tsp salt
  1. In a saucepan combine butter, sugar, milk and cacao powder. Bring to a boil, whisking regularly. Let boil for 1 minute.
  2. Remove from heat and add peanut butter and vanilla, whisk until smooth. Combine oats and salt, mix well.
  3. Drop by spoonful or large cookie scoop onto parchment or wax paper. Let cool at least 30 minutes or more.
  4. Store in fridge.
