No-Bake Cookies
Traditional no-bake, just with a vegan twist. Yields approximately 24 cookies
- 1/2 c vegan butter
- 1 3/4 c organic sugar
- 1/2 c unsweetened almond (or alternative) milk
- 1/4 c cacao powder
- 3 cup quick oats
- 3/4 c peanut butter (creamy or chunky)
- 1 Tbsp vanilla extract
- 1/4 tsp salt
- In a saucepan combine butter, sugar, milk and cacao powder. Bring to a boil, whisking regularly. Let boil for 1 minute.
- Remove from heat and add peanut butter and vanilla, whisk until smooth. Combine oats and salt, mix well.
- Drop by spoonful or large cookie scoop onto parchment or wax paper. Let cool at least 30 minutes or more.
- Store in fridge.
