Banana Bread
Preheat oven to 350. Grease a bread loaf pan with coconut oil.
Bread ingredients
- 2 cups sifted flour or gluten free 1:1 baking flour
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 2 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp sea salt
- 3 large ripe bananas
- 1/2 c brown sugar
- 1/4 dairy-free milk
- 1/3 c applesauce (or one pouch)
- 2 tsp vanilla extract or 1 tsp vanilla paste
Topping ingredients - mixed together
- 1/4 brown sugar
- 1 Tbsp granulated sugar
- 1 tsp cinnamon
Instructions
- In medium bowl whisk together sifted flour, cinnamon, nutmeg, baking powder, baking soda and sea salt. Set aside.
- In large bowl combine mashed banana, brown sugar, DF milk, applesauce and vanilla.
- Fold the dry ingredients into the wet ingredients until just combined.
- Pour batter into the loaf pan, sprinkle with topping.
- Bake uncovered for 65-70 minutes. I start watching at 55 minutes, especially when using gluten free flour. Toothpick or cake tester should come out clear.
- Let cool for 10 minutes before removing from pan.
- Serve warm or continue to cool.
- Store in refrigerate and warm up your slice for few seconds in the microwave when ready to eat.
