Banana Bread

 Preheat oven to 350. Grease a bread loaf pan with coconut oil.

Bread ingredients

  • 2 cups sifted flour or gluten free 1:1 baking flour
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • 3 large ripe bananas
  • 1/2 c brown sugar
  • 1/4 dairy-free milk
  • 1/3 c applesauce (or one pouch)
  • 2 tsp vanilla extract or 1 tsp vanilla paste
Topping ingredients - mixed together
  • 1/4 brown sugar
  • 1 Tbsp granulated sugar
  • 1 tsp cinnamon
Instructions
  1. In medium bowl whisk together sifted flour, cinnamon, nutmeg, baking powder, baking soda and sea salt. Set aside.
  2. In large bowl combine mashed banana, brown sugar, DF milk, applesauce and vanilla.
  3. Fold the dry ingredients into the wet ingredients until just combined.
  4. Pour batter into the loaf pan, sprinkle with topping.
  5. Bake uncovered for 65-70 minutes. I start watching at 55 minutes, especially when using gluten free flour. Toothpick or cake tester should come out clear.
  6. Let cool for 10 minutes before removing from pan. 
  7. Serve warm or continue to cool.
  8. Store in refrigerate and warm up your slice for few seconds in the microwave when ready to eat.
