Sweet Potato with Jack Fruit & Cashew
Wow this recipe took us by surprise. It was super easy, so filling, so delicious, and so healthy! A lovely fall dish that we'll be making again several times in the coming months.
Sweet Potato with Jack Fruit Cashew Medley
Ingredients
4 roasted sweet potatoes
1 tablespoon olive oil
1/2 cup finely chopped celery
1/2 cup dried tart cherries
1/2 cup golden raisins
6 tablespoons orange juice
1/2 teaspoon ground cinnamon
1/4 teaspoon ground red pepper
1/4 teaspoon kosher salt
1 cup green jackfruit
1/2 cup dry-roasted cashews, unsalted
Preparation
1. Preheat oven to 400°. Bake potatoes until tender.
2. Heat a large nonstick skillet over medium heat. Add oil; swirl to coat. Add celery; cook 2 minutes, stirring frequently. Add cherries and next 5 ingredients (through salt); cook 1 minute. Stir in jack fruit and cashews; cook 2 minutes. You can choose to slice potatoes and stuff them or chop the potato in bite size pieces. Top with jackfruit mixture.
