No-Bake Energy Bites
We've played around several times with variations of this recipe. This seems to be the best one that we like the flavors of the most.
PRINTABLE RECIPE
1 c dry rolled oats
1/3 c unsweetened shredded coconut
1/2 c nut butter (creamy peanut butter is our preference)
1/4 c ground flax seed
1/4 c chia seed *optional* sometimes I omit because those little seeds get stuck in my teeth and drive me nuts
1/2 c cacao nibs or mini chocolate chips (we do half and half)
1/4 c raw honey
1 tsp vanilla
Mix all ingredients together by hand. Roll into balls or use a ball cookie dough scoop if you have one. We keep ours in the fridge and they seem to stay together better and last longer.
So yummy and a healthy, sweet bite when you need one! Try substituting dried fruit like blueberries for the chocolate chips for a fun variation.
