Overnight Oats
Perfect for those cold winter days when you just can't help but hit the snooze button. Knowing breakfast is already made and waiting for you! Yields 6 large servings.
3 3/4 cup water
1 1/4 cup almond milk (or other milk)
1 1/2 cup steel-cut oats
3/4 cup golden raisins (or other dried fruit)
1/4 maple syrup
1 1/2 tsp vanilla extract
3/4 tsp cinnamon
1/2 tsp kosher salt
Combine ingredients into an 8 cup heatproof glass bowl, mix well - especially the cinnamon, it can have a hard time mixing with cold milk and water (often times I will combine those first using a whisk). Place the bowl inside a 6 quart slow cooker, add water to the slow cooker until it comes 3/4 of the way up to the outside of your glass bowl. Cover and cook on low for 8 hours or until oats are thick and creamy. Stir and add your choice of ingredients: fresh fruit or berries, banana, almonds, walnuts, additional almond milk, flax seed, hemp seed, brown sugar, etc.
