Calorie Bomb Cookies

We altered this recipe from one printed in Outside Magazine.  Great treat for the kids and they don't know it's healthy!  Makes approximately 30 cookies...fun breakfast treat.


4 cups rolled oats
1½ cups almond flour
1 teaspoon baking powder
½ teaspoon salt
3 ripe bananas
1 cup raw cane sugar
1/3 cup coconut oil
¼ cup plus 2 tablespoons water
2 tablespoons chia seeds
2 teaspoons vanilla extract
1 cup dark chocolate chips
1 cup raw sunflower seeds
½ cup raw pumpkin seeds
½ cup shredded coconut (optional)


Preheat oven to 350 degrees. Pulse 2 cups of the oats in a food processor/blender until finely ground, then transfer to a large bowl. Combine with remaining oats, flour, baking powder, and salt. In a high speed blender combine the bananas, sugar, oil, water, chia seeds, and vanilla until smooth. Add to the oat mixture and stir until combined. Add the chocolate chips, sunflower seeds, pumpkin seeds and coconut. With wet hands, form ¼ cup of dough into a ball for each cookie and flatten to about one inch thick. Bake cookies for 30 minutes or until golden brown. Store in an airtight container and wrap in parchment paper for on-the-go eating.
