Waffles from scratch
Saturday is for waffles. But when you’re quarantined to your home and grocery store shelves are empty you and you are out of waffle mix in the pantry you have to improvise. For our traditional Waffle Saturday we whipped up this recipe and have now found a new favorite. **no eggs required**


Daddy Saturday Waffles (print here)
- 3 cups all purpose flour (haven’t experimented with other types of flower but probably can substitute - especially if interested in making gluten free)
- 4 Tbsp coconut or turbinado cane sugar (optional)
- 4 tsp baking powder
- 1 1/2 cups alternative milk (we used Silk Almond Cashew original with protein)
- 6 Tbsp Vanilla Bean Olive Oil
- 4 Tbsp hemp seeds
- Pinch of salt
Mix all ingredients together. Add more milk if necessary to get required consistency. The sugar in this recipe gives it just enough sweet that I don’t need any syrup, but you can omit this ingredient if you don’t want the added sugar. You can also use unsweetened milk.
Follow instructions for your waffle iron. This recipe makes 15 square waffles; we like to freeze them and keep on hand for rainy days (or when there is no time to cook dinner)

The milk we use and the hemp seeds are ways for me to get additional protein into a meal for our kids; they have no idea and gobble them up just the same.
