Yo Soy Feliz
This is a compilation of several other recipes, but man I can devour these. I used to always order "Yo Soy Feliz" or "I'm Happy" from Cafe Gratitude in Kansas City All. The. Time! and they took it off their menu. I finally nailed my best recreation of it at home; this will now be on the regular menu. Read through completely, there are a lot of recipes in here, this is a great recipe to make after you've already have some of the items on hand (i.e. coconut bacon, sour cream, beans).
I'm SO Happy
- Small tortillas
- Pinto or black beans (make ahead of time or used canned)
- Broccoli slaw (see below)
- Sautéed mushrooms
- Roasted sweet potatoes
- Coconut bacon
- Avocado crema (see below)
- Non-dairy Sour Cream
Slaw Dressing
- 2 Tbsp chopped cilantro
- 4 Tbsp Persian Lime Olive Oil
- 2 limes
- 2 Tbsp honey
- 3 garlic gloves
- salt
Avocado Crema (everything in a blender)
- 2 ripe avocados
- 2 limes
- 2 Tbsp Persian Lime Olive Oil
- 1 jalapeno
- Handful of cilantro
- 1/2 tsp coriander
- 1/2 tsp garlic salt
- 1/2 c distilled water
- Peel and dice sweet potatoes. Toss with olive oil, salt, pepper, and cumin. Bake approximately 25 minutes at 425.
- Bake tortillas in same oven following sweet potatoes, 5 min each side. Watch closely, some ovens cook faster than 5 min. Want them crispy enough to hold all the toppings. *Step 1 & 2 can easily be done ahead of time
- Sauté mushrooms with olive oil and a little garlic salt.
- Combine broccoli slaw and dressing. For the slaw I use a store bought mix. You could use regular coleslaw mix, but the broccoli slaw is sturdier and holds up really well.
- Assemble tostadas
- Tortilla
- Beans
- Sweet potatoes
- Broccoli slaw
- Mushrooms
- Avocado crema
- Coconut bacon
- Sour cream
Grab a lot of napkins and enjoy. Keep a fork handy, but it really does taste better if you eat with your hands :)
