Pickled Onion & Feta Salad
- Lettuce of your choice
- Vegan feta
- Diced walnuts
Pickled Onions
- 1 sliced red onion
- 1/2 c apple cider vinegar
- 1/4 c white wine vinegar
- 1/2 c water
- 2 Tbsp honey
- 1 Tbsp salt
Put all ingredients in a saucepan. Heat until honey and salt are dissolved. Take off heat and let cool 5 minutes. Put onions into a mason jar and pour liquid over onions. Seal and let marinate for at least an hour, overnight is best.
Dijon Dressing
- 1 avocado
- 2 Tbsp Dijon mustard
- 2 Tbsp Tahini
- 1/4 c Olive Oil
- Salt
- Pepper
- Half a shallot
- Optional: Vinegar leftover from onions to thin and add flavor
Put all ingredients (except shallot) in mini food processor or blender. Mix until well combined, add vinegar mix and/or water to get desired consistency and flavor, stir in shallots.
