Pickled Onion & Feta Salad

  • Lettuce of your choice
  • Vegan feta
  • Diced walnuts
Pickled Onions
  • 1 sliced red onion
  • 1/2 c apple cider vinegar
  • 1/4 c white wine vinegar
  • 1/2 c water
  • 2 Tbsp honey
  • 1 Tbsp salt
Put all ingredients in a saucepan. Heat until honey and salt are dissolved. Take off heat and let cool 5 minutes. Put onions into a mason jar and pour liquid over onions. Seal and let marinate for at least an hour, overnight is best.  

Dijon Dressing
  • 1 avocado
  • 2 Tbsp Dijon mustard
  • 2 Tbsp Tahini
  • 1/4 c Olive Oil
  • Salt
  • Pepper
  • Half a shallot
  • Optional: Vinegar leftover from onions to thin and add flavor
  • Put all ingredients (except shallot) in mini food processor or blender. Mix until well combined, add vinegar mix and/or water to get desired consistency and flavor, stir in shallots.
