Russian Tea Cakes

 Russian Tea Cakes ~ Mexican Wedding Cakes

Call them what you want, they're easy & delicious!

Preheat oven to 350, if you have 2 ovens you can make the entire batch at once.

  • 1 cup + 2 Tbsp vegan butter, critical that it is room temperature
  • 1 tsp vanilla
  • 2 cups all purpose flour
  • 6 Tbsp powdered sugar
  • 1 cup finely chopped walnuts
  • 1/2 cup powdered sugar for rolling
  1. Beat butter & vanilla in mixer until creamy.
  2. Add flour and 6 Tbsp powdered sugar to butter mixture. Mix until combined.
  3. Add in walnuts, mix until incorporated
  4. Roll into 1" balls on ungreased cookie sheet
  5. Bake 12 minutes, edges will just start to get golden brown.
  6. While cookies bake put 1/2 c powdered sugar in wide bowl.
  7. Once cookies cool to the touch roll them in powdered sugar. Let cool completely.
  8. Optional (and my preference) roll a second time in powdered sugar.
