Russian Tea Cakes
Russian Tea Cakes ~ Mexican Wedding Cakes
Call them what you want, they're easy & delicious!
Preheat oven to 350, if you have 2 ovens you can make the entire batch at once.
- 1 cup + 2 Tbsp vegan butter, critical that it is room temperature
- 1 tsp vanilla
- 2 cups all purpose flour
- 6 Tbsp powdered sugar
- 1 cup finely chopped walnuts
- 1/2 cup powdered sugar for rolling
- Beat butter & vanilla in mixer until creamy.
- Add flour and 6 Tbsp powdered sugar to butter mixture. Mix until combined.
- Add in walnuts, mix until incorporated
- Roll into 1" balls on ungreased cookie sheet
- Bake 12 minutes, edges will just start to get golden brown.
- While cookies bake put 1/2 c powdered sugar in wide bowl.
- Once cookies cool to the touch roll them in powdered sugar. Let cool completely.
- Optional (and my preference) roll a second time in powdered sugar.
