The Spokane Davenport Soft Peanut Brittle
We paid a small fortune for this delicious brittle until my mom found a copy cat recipe. Not we just make and eat way too much of it at home. So much better than traditional peanut brittle!
Makes 1 full baking sheet. Line baking sheet with parchment paper.
Ingredients
- 2 c creamy peanut butter
- 1 1/2 c sugar
- 1 3/4 c light corn syrup
- 1/4 c water
- 2 Tbsp vegan butter
- 2 c roasted peanuts (no salt)
- 1 tsp baking soda (dissolved in 1 tsp water)
- 1 tsp vanilla
- In a double boiler over hot water, place peanut butter to heat up while preparing syrup.
- In a large pot combine sugar, corn syrup and 1/4 cup water. Cook over high heat to 275º using a candy thermometer. Be patient (Barbara) this takes a while. I stir occasionally.
- Reduce heat to medium. Add butter, stirring until melted.
- Add peanuts and cook stirring for about 5 minutes or until candy starts turning brown and reaches 285º on the candy thermometer. Do not overheat, it will make the candy hard.
- Remove from heat, stir in baking soda/water. Add vanilla & stir.
- Work QUICKLY, fold in the warmed peanut butter stirring gently.
- Pour candy mixture onto baking sheet and spread to fill out to edges.
- Let cool completely (overnight) and break into serving size pieces.
