No Bake Chocolate Cookies

No-Bake Chocolate Chia Cookies
(that are healthy too)

  • 3/4 c. coconut oil
  • 1/2 c. sunflower butter
  • 1 c. cacao powder
  • 1/2 c. maple syrup
  • 4 tsp. vanilla
  • 1 - 3/4 c. rolled oats
  • 1 - 1/2 c. unsweetened shredded coconut
  • 1/2 c. chia seeds
  • 1/2 tsp. fine sea salt
  1. Line a cookie sheet with parchment paper.
  2. On the stove heat coconut oil on low heat.  Add sunflower butter (you can use peanut butter, almond butter, etc whichever your preference), cacao powder, maple syrup.  Whisk until blended smooth and creamy.
  3. Remove from heat, add vanilla.
  4. Fold in oats, coconut, chia seeds, salt.  Mix well.
  5. Use a retractable scoop or spoon, 2 tablespoons in size, and scoop spoon sized cookies onto parchment paper.
  6. Place cookies in fridge for 20-30 minutes.
  7. Store in fridge or freezer.
