Nana Diane’s Granola
When Gavin was just a baby I would take him to Kansas with me for my work travel. My friend and retired co-worker Diane would watch him during the day. She loved to be called Nana. This was her famous, somewhat secret, granola recipe. Nana is watching over all of us from heaven and loving that her recipe is being made, shared, and eaten (warning - you’ll eat a lot and in a short amount of time!)
Preheat oven to 350 degrees. Line two baking sheets with parchment paper.
- 4 cups old-fashioned oats (not Quick oats)
- 1 1/2 cups chopped almonds
- 1 1/2 cups chipped pecans
- 1 cup unsweetened coconut flakes
- 3/4 cup packed dark brown sugar
- 2/3 cup canola oil
- 3/4 cup honey
- 1/4 cup maple syrup
- 1 1/2 tsp ground cinnamon
- 1 tsp salt
- 2 tsp vanilla
Combine oats, nuts, and coconut, mix well. In a small saucepan, combine brown sugar, oil, honey, syrup, cinnamon and salt. Heat 3-4 minutes over medium heat until sugar is dissolved. Removed from heat and add vanilla. Pour liquid mixture over oat mixture and stir well.
Transfer granola evenly between two pans. Bake at 350 degrees for 30 minutes or until crisp. Cool completely and break into bite sized pieces.
**Notes**
- I think the sugar could be less in this recipe so have been playing around with it a bit. Once I get the right combo I’ll adjust the quantities above.
- Set the timer for 20 minutes and check ever 2-3 minutes. The last 10 minutes can crunch up fast, even burn so best to keep an eye on it.
