Gnocchi with Yams, Kale, and ‘Sausage’

1 lb gnocchi
4 sweet potatoes
2 bunches of kale
2 minced garlic cloves
6-8 vegan sausage links
Olive Oil
Salt & Pepper

Heat oven to 425 degrees.  Cube sweet potatoes in 1/2” cubes. Coat cubed potatoes with a little olive oil, salt and pepper. Put sweet potatoes on parchment paper lined cookie sheet.  Bake for 20-25 minutes until potatoes are tender.

In a non stick pan sauté the gnocchi in olive oil until crisp and golden brown, season with salt and pepper.  Sauté or grill vegan sausage, slice.  Once sweet potatoes are done turn oven off and add gnocchi and sausage to the sheet to keep warm. In same sauté pan add olive oil, garlic, kale and sprinkle with salt and pepper, cook until kale begins to wilt. 

Combine all ingredients together, mix and serve.  Add a little olive oil or salt and pepper if desired.
