Meatless Meatballs

Come over for dinner when we're serving spaghetti & "meat"balls and you'll never know the meal was vegan! This is a great option to make for someone who wants to eat plant-based but still likes meat textures and flavors.

Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Many homemade meatball recipes are cooked in oil. We prefer to bake for a healthier option, a light spray of EVOO will give it that crisp cook and save the calories.

Ingredients

  • 2 lbs impossible burger or plant-based "meat"
  • 3 Tbsp Just Egg (you can also use 1 Tbsp ground flax + 3 Tbsp water, if you use this option combine and let sit 5 min. until egg like consistency)
  • 1 small onion, finely chopped
  • 1/2 c panko bread crumbs
  • 1/2 c vegan parmesan cheese (or use homemade parmesan)
  • 2 Tbsp fresh Italian parsley, chopped
  • 1 Tbsp fresh oregano, chopped
  • 1 Tbsp fresh basil, chopped
  • 3/4 tsp ground pink salt
  • 1/2 tsp fresh ground pepper
Combine all ingredients in a mixing bowl. Get the kids involved and mix with your hands, do not over mix. Wet your hands slightly, scoop mixture by large scoop, approximately 2", roll ball evenly and place on baking sheet that is lined with parchment paper. Keep hands wet while continuing through making balls, this will prevent sticking and allow to roll easily.

Lightly spray balls with olive oil, place sheet in preheated oven, bake 25 minutes at 350 degrees.  

Options: place cooked meatballs in your favorite sauce to simmer and absorb flavors, let cool and freeze to eat at another time, serve plain these are delicious!
