Chocolate Chip Cookies (vegan of course)

My son Gavin went to the internet to find the bestest ever vegan chocolate chip cookies.  He googled it and of course came up with “The Most Wonderful Vegan Chocolate chip Cookies Ever” by Baker by Nature.  If the title doesn’t speak for itself, you’ll agree once you try these.  We modified just slightly, but these are quick and easy and no one will ever miss (or even know) the egg and butter in traditional recipes.


  • 1/2 cup solid coconut oil
  • 1 1/4 cup light brown sugar, packed
  • 2 tsp vanilla extract
  • 1/4 cup coconut milk, prefer from the can thicker version
  • 1/4 cup unsweetened applesauce.  Tip: kids applesauce packs are exactly one cup.
  • 2 1/3 cup all-purpose flour, we prefer to sift ours with baking soda to ensure it is mixed well.
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 package vegan chocolate chips, we use Enjoy Life Semi-Sweet and we like the mini ones.
1. Preheat oven to 375º.  Line cookie sheets with parchment paper.
2. In a large bowl combine coconut oil, brown sugar and vanilla.  Beat until well combined.  Add in coconut milk and applesauce mix until well combined again.
3. Add flour, baking soda and salt to a sifter.  Sift while beating cookie dough.  Smooth (tasty) dough will form.
4. Fold in chocolate chips.
5. Scoop out desired size dough onto parchment paper.  We’ve made traditional size and mini cookies and they both turn out great. Bake for 9-11 minutes, we almost always cook for 11 minutes at our house.
