One Pot Wonder
I was so skeptical this would turn out when I converted it to a vegan recipe. I was so wrong! This is the easiest meal I've ever made and it's so delicious!!!!
One-Pot Vegan Kale Pasta Sausage
- 1 lb rigitoni or penne
- 1 lb vegan sausage (we used 4 Beyond the Meat sausage links), casing removed and raw 'meat' crumbled.
- 2 cups chopped kale
- 2 cups shredded purple cabbage
- 1 28 oz can diced tomatoes
- 1 large red onion, chopped
- 8 sliced garlic cloves
- 2 Tbsp pesto (homemade or Sprouts Vegan Pesto)
- 3 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp crushed red pepper flakes
- 8 cups water
Are you ready??? There is only one step to this recipe!
- Combine everything in a pot! Bring to a boil over high heat. Continue on boil for 10-12 minutes stirring frequently. Water will be mostly evaporated, noodles will be al dente.
You can top with Shredded vegan parmesan or Brazil nut parmesan.
