One Pot Wonder

I was so skeptical this would turn out when I converted it to a vegan recipe.  I was so wrong! This is the easiest meal I've ever made and it's so delicious!!!!

One-Pot Vegan Kale Pasta Sausage

  • 1 lb rigitoni or penne
  • 1 lb vegan sausage (we used 4 Beyond the Meat sausage links), casing removed and raw 'meat' crumbled.
  • 2 cups chopped kale
  • 2 cups shredded purple cabbage
  • 1 28 oz can diced tomatoes
  • 1 large red onion, chopped 
  • 8 sliced garlic cloves
  • 2 Tbsp pesto (homemade or Sprouts Vegan Pesto)
  • 3 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp crushed red pepper flakes
  • 8 cups water
Are you ready??? There is only one step to this recipe!

  1. Combine everything in a pot!  Bring to a boil over high heat.  Continue on boil for 10-12 minutes stirring frequently.  Water will be mostly evaporated, noodles will be al dente. 
You can top with Shredded vegan parmesan or Brazil nut parmesan.
