Monster Bars

 Recreated from an impulse purchase by a pastry chef in Steamboat Springs.

  • 2 cups oats
  • 2 cups crispy rice
  • 1 cup toasted coconut flakes
  • 1/2 cup dried blueberries
  • 1/2 cup dried papaya
  • 1/2 cup raw pepitas
  • 1/3 cup hemp seeds
  • 1/2 cup pecans
  • 1 cup peanut butter
  • 1/2 cup honey
Mix all ingredients together in a bowl until well combined.  Line a 9x13 pan with parchment or wax paper. Press firmly into the pan. Chill overnight and cut into 12 bars.  Great source of protein for breakfast or a delicious treat for dessert (because they're so good!)
