Pea Salad

Peas have so much protein, literally jam packed in that tiny green ball! 1/2 cup has 4 grams of protein.  Peas are used in some alternative milks to add protein.  This looks and tastes like an ordinary side salad, but you get all the protein too!

  • Salad
    • 50 oz green peas, thawed and drained
    • 2 cans sliced water chestnuts, drained
    • 1 package plant based bacon
    • 1 red onion
  • Garnish
    • 1 tomato
    • Snow peas
  • Dressing
Steam peas in the microwave or stovetop; drain and let cool - preferably overnight in the fridge. Cook bacon and chop into small pieces, like bacon bits. Drain water chestnuts, leave whole slices. Dice red onion.  Mix all dressing ingredients together and combine with peas, bacon, water chestnuts and onion.  Cut the tomatoes into slices.  Scoop large (ice cream scoop size) serving onto salad plate, garnish with tomato and snow peas.
