Vinaigrette Waldorf Salad

 Growing up the holiday Waldorf Salad my grandmother made included dried fruit and mayonnaise.  This recipe is such a refreshing twist on a traditional dish.  

Dressing

  • 1/4 c. Dijon mustard
  • 1/2 c. Champagne vinegar
  • 2 Tbsp minced shallots
  • 3/4 tsp. Salt
  • 1/4 - 1/2 tsp. White pepper
  • 1 1/2 c. Olive oil
Whisk all ingredients together except olive oil.  Slowly add in olive oil and whisk briskly until emulsified.  Serve at room temperature, but can be stored in fridge when not using.

Salad
  • Lettuce of your choice
  • 4 Granny Smith apples, diced
  • 1 head of celery (approximately 10 stalks), diced
  • 2 cups walnuts, broken into smaller pieces
  • Parsley
  • Vegan feta cheese
Combine diced apples, celery and walnuts and dress with salad dressing, not too much. Lightly dress lettuce with dressing.

Put a bed of greens on salad plate, top with apple mixture.  Garnish with feta and parsley; the feta adds a creamy smoothness and the parsley just makes it look pretty.
