Dark Chocolate Truffles

1 ripe avocado
1 1/2 Tbsp unsweetened cocoa powder
2 Tbsp coconut sugar
1/4 tsp vanilla extract
1/8 tsp salt
5 oz. dark chocolate (preferably 70% or higher)

Pit the avocado and place in food processor.  Add coconut sugar, vanilla, salt and cocoa powder.  Process to combine until smooth.  Melt the dark chocolate in a double boiler on the stove.  Once melted combine in food processor with other ingredients.  Mix thoroughly.  Place the mixture in the fridge for 30-40 minutes or until cooled completely and set.  Using a small cookie scoop or tablespoon, scoop out mixture to form balls with your hands.  Roll in your favorite topping to serve.  Keep refrigerated.

*Tip*
Optional items to roll your truffle in could include cocoa powder, toasted coconut, finely chopped nuts, powdered sugar.
