Lemon Pasta
This recipe was inspired (and altered) by a demo on the Today Show (print recipe)
- 1 lb pasta of your choice (we love Banza to add protein to our meal)
- 3 lemons, zest of 3, juice of 2
- 4 Tbsp Earth Balance butter or butter flavored olive oil
- 1/2 cup Brazil nut parmesan cheese
- salt and pepper to taste
Generously salt a pot of water to cook pasta. Ensure pasta is cooked al dente and reserve 1/2-3/4 cup of the pasta water for the sauce.
In a separate pan melt the butter, add the juice and zest from lemons, parmesan cheese, and finally pasta water once pasta is done (use 1/2 cup and add more if needed after combined with pasta).
